Our retail product is a  Split Quarter of beef. This  package of Gourmet beef cuts includes a proportional amount of all the cuts in a side of beef and amounts to approximately 1/8 of a whole beef. What we do is cut a side to our standard cutting specification and then divide it into 4 equal parts with each part receiving a quarter of the beef cuts. Since ours are miniature cattle the whole beef is smaller to begin with and thus this package provides a complete variety of our Lowline Aberdeen Angus beef cuts and will still fit a small freezer (about 1 cubic foot of space needed).

We make our split quarters up in packages which average around 25 lbs. and generally includes a sampling of steaks such as Porter house, T-bone, sirloin, top round, flank, flatiron, and rib-eyes. The package may also include stew meat, soup shanks, possibly a roast, our special ground beef, short ribs and possibly some other miscellaneous cuts. The exact cuts included will vary depending on the steer and how the butcher divides it up.

Split Quarters are sold on a first come first served basis and we recommend pre-ordering this item to be sure you can get one when they are ready. Their is no cost to get on our reservation list and no payment is required until your order is ready to ship.

Cost and ordering:

1.  The cost for one split Quarter is $7.95 per pound based on the actual meat weight in the package. The meat may picked up at the farm. Shipping is a lump sum of $30.
